So, I ended up at Publix this afternoon and bought nearly five pounds of chicken drumsticks. Now I need a good recipe. I was going to do my buffalo wings (hot sauce, almond butter, wheat free tamari sauce) but I figured id see if any of you have something better in mind.
So, I took some time off from posting. Got busy and just got lazy. But I am realizing that oddly enough, I am more strict with myself when I am posting. So I am back to regular posts now.
I have been going to crossfit regularly, but been a little slack on my paleo eating routine. I am back to strict eating.
Mr. D and I are going back here:

in early October. I have been hovering around 190, and would love to be closer to 185 by the time we are back in Mexico. That gives me about two weeks. If I am down to 187 or less, I will be happy with my progress.
Dinner - grilled flank steak, spaghetti squash, with spicy marinara and grilled zucchini. AMAZEBALLS
So Tuesday started with another fun WOD

It’s all self explanatory I think except for the last one. Basically grab a bar, place one foot on a box (24”) and step up while pressing the bar and raising your opposite knee…yeah it was clumsy but interesting. This was an AMRAP, I only got to 3 and 1/3 done.
I came home and was lazy so had a quick breakfast.

Lunch was a quick salad with lots of veggies.
Dinner was freezer leftovers, but I think it looks good. Garlic beef balls with sauteed zucchini and homemade spicy marinara sauce.

So, yesterday was my first “full” day of work since summer began, so I didn’t have a lot of time to post. Here is a recap of Monday.
It started with my typical morning smoothie of protein powder, almond butter, berries and almond milk. Then Mr. D. and I headed to our CrossFit Box. The WOD was titled “Filthy Fifty” and it was INDEED Filthy!

So it was a chipper, where we all started with 50 box hops, then you move on down the list finishing with 50 Double Unders. I still can’t do double unders so I did 150 regular jump ropes, and was surprised to hit a PR for consecutive jump ropes at 50! This may not seem like a lot, but it is to me. My total time for this WOD was 33:53
Then we came home, and I had a bacon, egg almond biscuit with fruit.

Lunch was on the road and consisted of a left over chicken breast with field greens and a pear.
Dinner was leftovers as well. Beef burger, with bacon, fried egg, and homemade guacamole.

Dinner - Almond flour breaded chicken on top of mixed greens topped with a home made spicy marinara sauce.
Mr D. and I went out on a fun adventure today…we went go-karting. It was a blast, 11 miles of go karting followed by feed alligators, and a HUGE video arcade. I felt like a kid again. We both had a great time, but he came he sick. He has the sniffles and a cough, so I decided to make something spicy tonight to help out his sinuses. Fingers crossed this does the trick.
Lunch - this is my go-to chipotle meal. Salad bowl with extra fajita veggies, double carnitas, hot salsa and a side of guacamole
Breakfast - almond flour sausage and egg biscuit

Okay, so the BF and I are sitting on the couch starting to watch LOST we are currently on episode #4 of season #1, I know, we are a little behind the times….but we are working on it. Gotta love Netflix! Somehow we got to thinking about ice cream.
So, I did some research and I see some paleo recipes including:
I am curious if any of you have had paleo ice cream. Any suggestions? Any favorite recipes? I also need to buy an ice cream maker, any suggestions there?
Dinner - beef burger topped with bacon, fried egg, and more bacon. Served with homemade guacamole, sautéed spinach and onions, and roasted asparagus fries. Pretty much Paleo-nom-HEAVEN
Lunch - half a grilled chicken breast on mashed sweet potatoes.
Breakfast - fried egg and bacon, almond flour biscuit
So LITERALLY within 3 minutes of posting my breakfast photo, I had 4 people message me asking for my paleo ketchup recipe. Now, I LOVE ketchup, and since going paleo it’s probably one of my most missed items. This recipe is pretty darn good, but not an exact substitute as real ketchup has lots of sugar. Also, remember since this is fairly fresh so it will only last a couple weeks in your fridge. So here it is….
1 small can (384 mL/12 oz) of plain, sugar-free tomato sauce
1 small can (6 oz) tomato paste
2 tsp vinegar (I used apple cider)
3/4 tsp garlic powder
1/2 tsp onion powder
a pinch of ground cloves
1/4 tsp allspice
Combine all ingredients in a small sauce pan and simmer for 10-15 minutes. Let cool and transfer to container and then into fridge.
Breakfast 2 eggs, 2 egg whites, bacon and Paleo ketchup.
Dinner - pan seared chicken breast with sautéed onions served with mashed sweet potatoes and a salad (not pictured)
